I'm mostly with you here (I don't understand the concerns you have regarding outlawing or removing this method, but please offer a followup to help me better understand!).
I didn't have SMS as my 2FA method when this news went down. I use Authy, which may or may not be the best service.
I think the reason a lot of people were upset by this is that SMS is a common method and an easily understood method for the broadest possible number of users (and that may be the method most people had set up to begin with). And, well, not everyone is well verse in account security, so any change like this is naturally going to lead to these reactions even if there are other methods out there.
And this actually gets to one of the points I mentioned here: Twitter could have easily said "hey, your accounts are still secure...just this method is getting cut for these reasons...and here's how to get 2FA via other means." What I saw were a lot of people scrambling around to figure out what to do, and all that could have been avoided.
